Happy Sunday! Recently my favorite Saturday morning activity has been to wake up and bake! I don’t know why, but something about the seasons changing and fall coming makes me want to bake all the cozy breads, muffins and treats! I made my great grandmother’s pumpkin bread recipe for the first time this season a couple of weeks ago and it was heavenly! I decided to switch things up this weekend and try out a new recipe for coffee cake muffins…yum!
I have always loved a good coffee cake, and these muffins were so easy to make! They were delicious, and the streusel topping has such a yummy cinnamon brown sugar taste! A great option this fall if pumpkin just isn’t your thing!
Muffin Ingredients:
2 1/4 cups flour
1 cup sugar
1/2 tsp baking soda
2 tsp baking powder
A dash of salt
5 tbsp softened butter
1/3 cup vegetable oil
2 eggs
1 cup sour cream
Streusel Ingredients:
3/4 cup flour
3/4 cup brown sugar
5 tbsp softened butter
1 1/4 tsp cinnamon
Directions:
- Preheat oven to 350° F & line muffin tin with liners or grease with cooking spray. This recipe makes 12 regular sized muffins.
- In a mixing bowl combine muffin dry ingredients (flour, sugar, baking powder, baking soda, and salt) and whisk together.
- In a separate bowl, combine muffin wet ingredients (butter, oil, eggs, and sour cream) and stir together. I use my KitchenAid here and then add in the dry ingredients to the wet ingredients already in the mixer!
- 1 cup at a time, add dry ingredients to the wet ingredients, stirring continuously, until fully incorporated.
- Pour half of the mixture into the muffin tins and set aside.
- Next, make the streusel by combining the flour, brown sugar, butter and cinnamon in a bowl and stirring together with a fork to make a wet sand-like consistency.
- Sprinkle half the streusel to the top of the muffin batter to create a middle filling, and then add the remaining muffin batter on top.
- Add the remaining streusel to the top of the muffins, and place in the oven to cook for 20-25 minutes on 350°F.
- Transfer muffins to a cooling rack and then enjoy warm!
