A Fun Easter Treat – Easter Egg Fruit Pizza Recipe

Happy Easter week!

This week is all about the celebration of our Lord and Savior, Jesus Christ, because He has risen! The older I get, it’s not lost on me what this *holiday* means and the sacrifice that was made by the King of Kings for us to have a new hope through the gift of grace!

Last year I decided to make a fun little Easter egg fruit pizza for our family Easter lunch after church, and not only did it turn out super cute – it was also delicious too! From my days back in the Theta house in college, fruit pizza became a favorite dessert of mine! I love how light and fresh it is, and also so customizable based off of your favorite fruits!

This fruit pizza is so cute made into the shape of an Easter egg, but would also be adorable for other occasions formed into other shapes!

I prefer to make homemade dough for this recipe, I think it’s tastier! But to simplify it even more, you could definitely use store-bought sugar cookies instead of making the dough from scratch!

Easter Egg Fruit Pizza

Ingredients

  • Sugar Cookie:
  • 1 cup butter softened
  • 1 1/4 cups granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar (to top cookie dough)
  • Topping:
  • 12 oz cream cheese (room temperature)
  • 6 tbsp butter (room temperature)
  • 2 cups powder sugar
  • 1 tsp vanilla extract
  • Colorful fruits cut into small pieces – I used strawberries, pineapple, kiwi, clementines, blueberries, and raspberries. Would also be delicious with bananas, watermelon, and blackberries!

Directions

  1. NOTE: I like to make the cookie dough the night before making the actual fruit pizza. I make the dough and then wrap it in saran wrap to refrigerate over night!
  2. Start by making the sugar cookie dough – preheat oven to 350 degrees and prep a baking sheet with parchment paper or cooking spay.
  3. In a large mixing bowl combine butter and sugar until light and fluffy using a hand or stand mixer.
  4. Add the egg, vanilla extract and almond extract, beat until well incorporated.
  5. Add the flour, baking soda, baking powder, and salt. Mix until combined, do not over-mix!
  6. Refrigerate dough until use or use a rolling pin to roll out cookie dough if baking immediately. Using a small knife, form the cookie into the shape of an Easter egg.
  7. Sprinkle granulated sugar on top of the egg shapes cookie.
  8. Bake 10-12 minutes or until the middle of the cookie is cooked through.
  9. Allow to cool before transferring to serving platter or plate.
  10. While cookies bake, make the icing by beating together cream cheese and butter in a mixing bowl until creamy and smoothly combined.
  11. Add powdered sugar and vanilla and mix until blended smooth.
  12. Once the cookie is cooled, spread cream cheese frosting on top.
  13. Top with desired fruits in any fun pattern!
