What I ate Week 2 of Whole30

I have a confession to make…

Last weekend after completing my first week of Whole30, I made a choice. And even though I completely still stand by that choice, I have to lead this post by confessing so that I am completely upfront and honest about this Whole30.

As Drew and I were getting ready for the weekend and making plans for being with our family and friends whether it be to watch the Aggies play, celebrate a birthday or have dinner with friends we haven’t seen in a while… every time we tried to make a plan there was a “but you can’t do that because of Whole30” or “we can’t go there… you can’t eat Whole30.” I know that’s a part of it, and nothing about doing the Whole30 is supposed to be easy per say, but having done this before, I do know it’s a sacrifice to make.

I decided last weekend, that I still had to live my life, and didn’t want to be miserable while trying to do it. I know I could just eat before going to any of those places, or bring my own food prepared, but to be honest that sounds miserable to me. What I’m trying to accomplish here isn’t misery, but to just refresh my eating habits and restore them back to making daily healthy choices. So, I made the decision last weekend that when it comes to the weekends, I’ll do the best I can to stay on track, but not at the expense of living my life and socially enjoying my friends and family.

I just wanted to add that context as we move forward because this certainly is not a perfect go at it or anywhere near the same commitment level I made the first time I completed Whole30. What I am committed to this time however is consciously making healthier lifestyle changes and following the plan closely Monday-Friday, and when I can on the weekends, while not limiting myself and missing out on being with people I love and sharing meals with them. I do still think the elimination of dairy and excessive sugars is what’s best for me and my body, and that is the goal with each meal I eat whether it’s at home on a weeknight or out on the weekends with friends.

Week 2 Whole30 Meals

Breakfast:

This week I chose to not really eat breakfast all week, but I’m thinking next I’ll definitely go back to the egg muffins I had last week and make them again for next week’s breakfast!


Lunch:

If I wasn’t eating leftovers this week for lunch, I would eat a tuna packet mixed with Primal Kitchen mayo which is Whole30 compliant and relish. This has been my go-to this week along with fresh watermelon. I don’t know what it’s been about the watermelon, but it has definitely hit the spot this week as a snack for my sweet tooth.


Snacks:

  • Fresh Watermelon
  • Lara Bars – the chocolate chip & blueberry are my favorites!
  • Honey Crip apples

Dinner:

Here are the meals we had this week during Whole30…

Shrimp Etouffee

As soon as I saw this was a recipe by The Defined Dish, I knew it would be good… and it was! Drew and I both really loved this dish. Pretty easy to make, full of flavor and filling! We made it and served it over cauliflower rice. Definitely something different than what we normally eat and so good!

Mongolian Meatballs

Another Defined Dish recipe, and it’s SO good. This has been a repeat dish several times over the last couple of months after someone I follow had posted about making it weekly for dinner. Drew and I both really enjoy this recipe!

Tomato Soup

This is a recipe I have made before, a while ago. I’m a sucker for a good tomato soup – La Madeline’s is my favorite. Since La Madeline’s recipe is definitely not Whole30 compliant, I did my best to find a similar texture and consistency to theirs. This one from All the Healthy Things is super yummy! Quick tip: double (or even triple) this recipe, it says it feeds four, but for some reason that’s not the case, it filled 2 small bowls for Drew and I, and that was it!

Crockpot Chicken Fajitas

This is actually on the menu for tonight, so it hasn’t been made just yet… but I can tell you just from looking at the recipe and the photos, it’s going to be gooooooood. I plan on serving the meat and veggies with the cassava flour tortillas I shared last week!

Turkey Burgers

I’ve been eating this specific brand of Turkey Burgers from Butterball for years! One of my favorites from my Miss Texas competition days for sure! I eat them bun-less or if I am craving a burger feel I’ll eat them on a lettuce wrap. These are great paired with veggies or sweet potato fries! I also found this delicious looking recipe for Whole30 garlic fries that I want to try next!

Crockpot Chicken Enchilada Soup

I SO badly wanted this to be good, but y ‘all… I was sadly disappointed. After my first bite I immediately went back to the recipe to make sure I hadn’t accidentally left out a key ingredient, because that’s kind of how it tasted. Not bad, just like something was missing. Not a ton of flavor, just kind of a soupy crockpot chicken. My first time doing Whole30 I made a delicious white chicken chili that I think my taste buds were hoping this would resemble, so I have now added that to the menu for next week!
